    This is not about the strongly salted tiny brown variety of anchovies. These white ones (boquerones) are marinated in salt, vinegar and oil, so they’re mild and delicate, but still bring the salt.

    Know someone who doesn’t like anchovies? Perfect – make them try one of these. If they still don’t like them, enjoy a bonus expression of disgust. We’re not here to make friends, just to tease them.

  • 'NDUJA WITH SUPER HONEY

    It’s so simple: heat honey with a savoury element.

    Here, the savoury element is garlic, but you could try chilli (fresh or dried), spices (fennel, cumin or peppercorns), herbs (rosemary, thyme), or even just sea salt flakes (smoked sea salt would be wicked). You get it.

  • CAULI & COMTÉ

    We’re pickling the cauliflower here and it’s no big deal. You’re merely heating a vinegar combo, pouring it over the cauliflower, then totting off to bed. If time doesn’t allow, anywhere from four-ish hours ahead would do.

    Make the pickling a big deal when the others appear, call the cheese shaving ‘interactive’ and put your feet up. Or have another sleep. You worked so hard.
